Don't cook olive oil - don't let it simmer in sauce. Cooking breaks down and destroys all the goodness olive oil offers. Add extra-virgin olive oil fresh on top of food after cooking. If battling serious illness where every breath matters, be very light on oil. Too many fats when chronically ill prevents healing speed. If feeling overall good, a little once in a while or once every other day is fine. Depends on how far down the rabbit hole of illness you are.
